What does a tissue packet on a hawker centre seat mean?

A packet of tissues on a seat means someone has choped it, the local word for reserving a spot, so look for another table. At busy hours we'd sit first: put down your own packet, one for each person, then go and order. A bag or an umbrella works the same way. The hawker etiquette guide has the rest of the routine.

Do I have to return my tray at a hawker centre?

Yes, diners must clear their used trays, crockery and litter at hawker centres, coffeeshops and food courts. First-time offenders get a written warning, and repeat offenders can be fined or taken to court. Carry your tray to the nearest return point when you finish and leave the table clear for the next person.

How do I order kopi at a hawker centre?

Plain kopi is coffee with condensed milk, kopi-o is black coffee with sugar, and kopi-o kosong is black coffee with nothing added. Kopi-c swaps in evaporated milk, and you add siew dai for less sweet, gau for stronger or peng for iced. Say the whole order in one breath at the drinks stall. The original Killiney Kopitiam shophouse is a friendly place to practise.

Which hawker centre should I go to first in Singapore?

Start at Maxwell Food Centre, in Chinatown by Maxwell MRT, with more than 100 stalls under one roof. Tian Tian's chicken rice is the queue everyone knows, and there's plenty else to eat when the line is long. For dinner across town, Old Airport Road Food Centre is a long hall by Dakota MRT that's best early in the evening, so we'd save it for a second night.

Do hawker stalls take PayNow, or only cash?

Many stalls show an SGQR label, one QR code that lists the payment options the stall takes, PayNow among them, so look for it before you order. Some famous stalls are cash only, including Tian Tian and Hill Street Tai Hwa. We'd carry small notes and coins for the day and treat a working PayNow code as a bonus.

What should I eat if I only have one or two hawker meals?

Have Hainanese chicken rice first: poached chicken, fragrant rice and a chilli and ginger-garlic dip, and Tian Tian at Maxwell Food Centre is the famous plate. Expect a queue there. For the second meal, we'd eat satay in the evening at Lau Pa Sat, where the satay carts set up on Boon Tat Street.

Are the Michelin hawker stalls worth the queue?

Yes, once: Michelin gives Hill Street Tai Hwa Pork Noodle one star and Tian Tian Hainanese Chicken Rice a Bib Gourmand, and tags both Worth Queueing For. A Bib Gourmand means good quality, good value cooking. We'd queue for the bak chor mee at Hill Street Tai Hwa on a weekday outside lunch, then eat the rest of the day at stalls with no line.

Is it OK to share a table with strangers at a hawker centre?

Yes, sharing a table is normal at hawker centres, and people eat and chat with strangers regardless of religion or diet. If a table has a free seat and no tissue packet on it, ask whether it's taken before you sit. You'll usually get a nod and a cheerful "go ahead".

Is hawker food safe to eat in Singapore?

Yes, every hawker stall needs a food licence from the Singapore Food Agency, and NEA regulates public health at the centres it manages. Each stall carries a grade of A, B or C based on its food safety record, or NEW in its first year, and the QR code on its licence shows the grade. Old A-to-D decals are out of date.

Why is a hawker stall closed when the centre is open?

A stall is usually shut because its cook is off: stallholders must run their stalls personally and can't sublet them, so a day away means a shuttered stall. Whole centres also close for regular spring-cleaning, generally every quarter, and NEA lists the dates on its hawker centres page. Keep a second stall in mind for the dish you came for.

What is zi char, and what should I order?

Zi char is home-style Chinese cooking, made to order and shared around the table, with classics such as prawn hor fun, prawn paste chicken and chilli crab. Order a few dishes for everyone to share rather than one each, and start with a noodle dish and a crab or prawn dish. We'd try it at dinner at Redhill Food Centre.

Is Singapore's hawker culture on the UNESCO list?

Yes, UNESCO inscribed hawker culture in Singapore on its Representative List of the Intangible Cultural Heritage of Humanity in 2020, the country's first entry on that list. UNESCO describes hawker centres as community dining rooms, where people from all backgrounds share a meal. For a first stop, we'd pick Maxwell Food Centre.

How many hawker centres are there in Singapore?

NEA's list has 123 markets and hawker centres, and 16 of them are newer centres that operators run for NEA. More than half of the 123 appear by block and street rather than a name, so Toa Payoh's Lorong 8 market is listed as Blk 210. For a first visit, we'd start at Maxwell Food Centre.
